Beef Stroganoff with Spinach on Homemade Fettuccine
Thinking of what to make last night for dinner, the thought of a Stroganoff pasta served at a restaurant close to us came to mind. We’ve not been out in ages so I actually don’t know if that restaurant still exists, but I remember the pasta and decided that I’ll try to make it at home. What follows is my recipe for Beef Stroganoff with Spinach on Homemade Fettuccine:
(Serves 2 and a toddler plus leftovers)
Fettucini
200g Flour (or 100g Flour and 100g Durum Wheat Flour)
2 Eggs
Stroganoff
Olive Oil
500g beef strips
1 onion thinly sliced
Garlic (optional)
1 punnet Button Mushrooms
2 tbs maizena (cornflour) in a bit of water to for a paste
1 cup prepared beef stock
1 cup sour cream
1/4 tomato paste
1/2 bunch of spinach, roughly chopped
Pasta
Put the 200g of flour in a mixing bowl and make a well in the center. Break eggs into this well and with a fork start incorporating the flour into the eggs, a little at a time. When all the flour is mixed into the egg, knead the dough until a homogeneous and smooth ball forms. If you have a pasta machine, roll the dough through as per pasta machine directions, else roll out thinly (a piece at a time) and cut into strips to form Fettuccini.
Add pasta to boiling and salted water and cook for about 7 minutes until al dente.
Stroganoff
Fry the beef strips in some olive oil till nicely browned, remove from pan and add thinly sliced onion to pan juices. Add sliced button mushrooms once the onions are translucent and stir together in the pan until browned. You can add garlic at this point if you would like. Mix the maizena paste into the onion mixture, stirring continiously as it thickens, add beef stock and stir through. Add the meat back to the pan and stir in the cup of sour cream and the tomato paste. Add the spinach on top of this mixture and put the lid on. Simmer for a few minutes until the spinach ins wilted and stir into the meat mixture. Turn heat right down and let it simmer for a few more minutes.
Mix drained pasta with stroganoff sauce and enjoy!
