Banana Muffins

Started making muffins a month or so ago and have been making these super delicious and very easy banana muffins very often:

4 mashed ripe or overripe bananas
1/3 cup melted unsalted butter
1/2 cup sugar
1 egg, slightly beaten
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all purpose flour

Mix the mashed banana, sugar, egg and butter together in a bowl and set aside. In a seperate bowl mix the flour, baking powder, baking soda and salt. Add the dry mixture to the wet mixture and mix until just blended – don’t overmix.

Fill 6x jumbo muffin cases or 12x normal size muffin cases and bake in a preheated 180C oven for about 20 minutes.
